Easy pizza
Make it with whatever's in your fridge!
This pizza is my 'go-to' meal when I don't know what else to make! There are three things I love about it. First is the fact that you can make it with pretty much whatever you have in your fridge and store cupboard. Second is that you don't need to faff around with yeast when you make the base. And lastly, that it's really, really easy to make! Of course, it's really yummy, too. So that's another reason to love it.
This recipe makes one large pizza that serves two.
Ingredients
- 175g plain flour - white or wholemeal
- 1½ teaspoon baking powder
- ½ teaspoon salt
- ½ tablespoon oil
- 85ml cold water
- Toppings of your choice
Method
- Mix togther the flour, baking powder and salt in a large bowl.
- Stir in the oil and water until a ball forms. Add a bit more water if needed: the dough should be soft but not too sticky.
- Knead the dough for a few minutes and then roll out on a floured surface using a rolling pin.
- Place the pizza base onto a greased baking sheet or a baking sheet covered with baking paper.
- Cook in the oven at 200°C for 5-10 mintes until the base has cooked.
- Take the pizza base out of the oven and turn over. Add whatever toppings you like or have available. I use whatever I have in the fridge but tend to start with a thin layer of passata or chopped tomatoes and always add lots of cheese! Make sure you cut the toppings into quite small pieces so they cook quickly.
- Return to the pizza to the oven for 10-15 minutes until ready.
