Irish soda bread

Easy, delicious and no yeast required!

When I first made soda bread, I couldn’t believe just how easy it was to prepare. You only need four ingredients… and, crucially, it doesn’t require any yeast! This is obviously perfect for these coronavirus / lockdown times when you can’t get yeast for love nor money 😉 It also means you don’t have to knead the dough or wait for it to rise - so it’s super quick to prepare. Irish soda bread is best eaten on the day it’s made, and is super scrummy toasted with jam and butter. Enjoy!

Irish soda bread

Ingredients

  • 250g plain wholemeal flour
  • 250g plain white flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 420ml buttermilk
  • Some extra flour for dusting

Method

  • Start by mixing the dry ingredients together in a large bowl.
  • Make a well in the centre and pour in the buttermilk. Mix well until a sticky dough forms.
  • Tip the dough onto a lightly-floured surface and fold it two or three times to make a nice ball. Do not knead!
  • Place the dough onto a baking tray lined with baking paper and flatten slightly.
  • Make a deep cross in the bread using a knife, so that the bread cooks right the way through.
  • Dust the dough with a little flour and bake at 200°C until golden brown.
  • Leave to cool on a wire rack and eat the same day if possible!
