Magic bread
No yeast or buttermilk required!
What to do if you want to make some bread yet have neither the yeast required for a traditional loaf, nor the buttermilk needed for soda bread? This recipe provides your answer!
All you need is lemon juice, milk and bicarbonate of soda - plus whatever flours you can lay your hands on, and a bit of salt. If you don't have a lemon, you can replace this with two teaspoons of white or cider vinegar.
Prep time is around ten minutes and it cooks in about an hour.

Ingredients
- 400g plain flour (200g of wholewheat and 200g of white ideally, but see below)
- 15g bicarbonate of soda
- 1 teaspoon salt
- About 100g porridge oats
- 500ml milk soured with the juice of 1 lemon
Method
- Place the flour, bicarbonate of soda and salt in a large bowl and mix well. If you don't have enough plain flour, self-raising (or any other type of flour!) also works.
- Add in the porridge oats and mix well again.
- Stir in the milk / lemon juice mixture, which should be slightly curdled. Alternatively, you can use two teaspoons of white or cider vinegar to replace the lemon juice if need be.
- The resulting batter will be quite sloppy - more like a cake mixture than a bread dough, but don't worry - this is perfect!
- Pour the batter into a 1-litre loaf tin (or one of a similar size) lined with baking paper and cook for an hour at 190°C.
- When ready, remove from the loaf tin and leave on a wire rack to cool.
