Mini chocolate pots
The super fast alternative to chocolate mousse!
Whilst chocolate mousse is heavenly delicious, the annoying thing about it is that you have to be very forward thinking. Once prepared, you need to leave the mousse in the fridge for at least two hours before it's ready to eat. This is NOT great if the urge for chocolate suddenly takes you... or if you need to rustle up something quick for some last minute guests.
Never fear! Help is at hand in the shape of these sophisticated little chocolate pots. Ready to chill in about ten minutes, they only need to cool for around half an hour. They're quite rich, so a small portion is all that is needed. They're great served with seasonal fruits such as strawberries or raspberries.
Ingredients
- 100g good quality plain chocolate (70% cocoa solids)
- 50ml milk
- 200ml double cream
- About 1 teaspoon of sugar
- 2 strawberries per pot to serve
Method
- Break the chocolate into little pieces and melt in a bowl over a pan of boiling water.
- Boil the milk in a pan and then stir in the the melted chocolate. Leave to cool.
- Whilst the mixture is cooling, whisk up 150ml of the cream until it holds soft peaks. Then, slowly and gently, fold the cream into the cooled chocolate mixture.
- Add in around a teaspoon of sugar, or more if the chocolate is too bitter for your liking.
- Spoon the mixture into three or four little bowls or ramekins and place in the fridge to cool for around half an hour. If you're really in a hurry, you can speed things up by putting them in the freezer for a short time.
- Whisk up the remaining cream and use to decorate the chocolate pots, along with the sliced strawberries.
