Mocktail Piña Colada
Better than the real thing!
I have become slightly obsessed with mocktails over the Christmas hols. This one we had on New Year's Eve and it was TOTALLY yummy. So we also had it on 1st January. And the 2nd. And we're going to have it again tonight, too! 😂
NB If your coconut milk has separated into a liquid and a solid, give it a good whisk before use to turn it back into a liquid.
Ingredients
- 400ml fresh pineapple juice
- 400ml coconut milk
- Juice of 1-2 limes
- 2-3 dessert spoons of icing sugar
- 4 slices of lime to garnish
- Some granulated sugar to decorate the rim of the glasses (optional)
Method
- Pour the pineapple juice and coconut milk into a large jug and whisk togther.
- Add in the lime juice and mix well. I find that the juice of 1.5 to 2 limes is enough - but you can use more (or less) according to personal preference.
- Add in the icing sugar and stir well, then place in the fridge until ready to drink.
- About five minutes before you are ready to serve your mocktail, prepare the glasses. Wet the glasses under a tap, then place them in a freezer to create a frosty effect. You can also dip the rim of the glasses in some granulated sugar to make them prettier if you wish.
- When ready to serve, give the piña colada another good mix, then pour into the chilled glasses. Serve with ice cubes, if desired, and add a slice of lime to each mocktail to decorate.
