Nanny D's banana cake
This recipe is perfect for using up over-ripe bananas. In fact, the older, browner and squishier the better!
It's adapted from a recipe in a little booklet my nan gave me many years ago - one she got with a foodmixer she bought. It's a recipe I go back to time and time again... as evidenced by the many stains and splashes on the booklet! I do hope you enjoy it as much as me!
Ingredients
- 50g butter or other cooking spread
- 100g sugar (caster or demerara)
- 2 eggs
- 2 ripe bananas
- ½ teaspoon of vanilla essence
- 125g self-raising flour
- ½ teaspoon of baking powder
Method
- Cream the butter (or cooking spread) and sugar together in a large bowl using a wooden spoon. Then stir in the eggs and vanilla essence.
- Mash up the bananas in a small bowl and add to the mixture. Mix well using a fork to remove as many lumps as possible.
- Add in the flour and baking powder. Mix again to combine thoroughly.
- Grease and line a cake tin measuring approx. 18cm square, or use a loaf tin.
- Bake in the oven at 190°C for around 40 minutes.
- Once cooked, remove from the oven and leave to cool before serving.
