Sausage and cannellini bean casserole
Perfect for chilly evenings!
After a week or so of really hot and sunny weather, the last few days have been wet and chilly. So what better way to warm up than with a hearty sausage casserole? This recipe is quick and easy to prepare and great served with coucous and broccoli.

Ingredients
- 1 tablespoon olive oil
- 8 good quality sausages
- 1 large onion (chopped)
- 1 large carrot (chopped)
- 2 sticks of celery (chopped)
- 2-3 cloves garlic (finely chopped or crushed)
- 1 x 400g tin chopped tomatoes
- 1 tablespoon tomato puree
- 8 or so sliced mushrooms
- 1 teaspoon smoked paprika
- 200ml stock - chicken or veg
- 1 x 400g tin cannellini beans
- 100g sliced spring greens
Method
- Heat the oil in a deep, wok-style frying pan. Cook the sausages until cooked through and browned all over (without burning!) Remove from the pan and set aside.
- Add the onion, carrot and celery to the pan. Stir in the garlic. Cook for around ten minutes until all the ingredients are soft and slightly golden.
- Return the sausages to the pan and add in the tomatoes, tomato puree, mushrooms, smoked paprika and stock.
- Bring to the boil and then simmer for around 20 minutes until the sauce has thickened up. You may want to add a bit more stock if the sauce boils away or is not as juicy as you'd like.
- Add in the cannellini beans and greens and cook for about another five minutes until the greens have softened.
- Serve with couscous and / or broccoli.
