Spinach and chorizo frittata

Like an omelette... but better!!

According to Wikipedia, fount of my frittata knowledge, there are four main differences between a traditional omelette and this Italian dish -- who knew?!

First, frittata always has at least one ingredient in addition to eggs. These additional ingredients are mixed with the raw eggs for cooking rather than being placed on top later.

Secondly, the eggs are typically beaten more vigorously for a frittata than for a traditional omelette, resulting in a fluffier and thicker end result.

A third difference relates to cooking time and method. Frittata is cooked much more slowly than an omelette and over a low heat. Once the underside is set, it's usually finished off under a grill.

A final difference relates to how the dishes are served. Frittata is not folded over, like omelettes often are.

We had our frittata with salad. And it was yummy!

Spinach and chorizo frittata

Ingredients

  • 450g frozen spinach
  • 2 tablespoons olive oil
  • 4 spring onions, finely chopped
  • 10 slices of chorizo, cut into quarters
  • 550g of new potatoes, cooked, cooled and sliced, or a large tin of new potatoes, drained and sliced
  • 8 eggs
  • 100g Cheddar cheese, grated

Method

  • Place the frozen spinach in a bowl and pour over some boiling water to defrost. Drain and squeeze out the excess water, and set aside.
  • Heat the olive oil in an ovenproof frying pan and cook the spring onions for a couple of minutes until they start to soften. Add in the chorizo, potatoes and spinach and cook for around 3-4 minutes.
  • Crack the eggs into a bowl and season with salt and pepper. Whisk well so the eggs are full of air. Add in 70g of the grated cheese.
  • Pour the egg and cheese mixture into the pan and cook on a low heat for 8-10 minutes until the underside begins to set.
  • While the frittata is cooking, put the grill on a high heat. Sprinkle the remaining cheese over the frittata and place the frittata pan under the grill for around 5 minutes until the top layer is cooked and the cheese starts to bubble.
  • Serve with a crispy green salad.
