Turkey meatball tray bake

Makes for a deliciously colourful supper

I rarely eat turkey. Even at Christmas I tend to opt for other meats. I’m not sure why to be honest, as it’s delicious when cooked well. What’s more, turkey is rich in some good stuff: protein, vitamin B, selenium and phosphorus, and contains less of the not-so-good stuff: calories and saturated fat.

I tried this tray bake this week, and it was yummy. So it may just be the push I need to eat more of this meat!

It’s easy to make, as long as you keep an eye on the timings. It’s also really colourful so would make a great meal to serve dinner guests. And the yoghurt accompaniment is divine!

Turkey meatball tray bake

Ingredients

For the tray bake:

  • About 750g baby potatoes, halved (or quartered if large)
  • 4 cloves of garlic, peeled, whole and lightly crushed
  • 1 tablespoon olive oil
  • 1 large red onion, cut into chunks
  • 1 red and 1 green pepper, cut into thick slices
  • 12 turkey meatballs (about 400g)
  • 150g cherry tomatoes, halved

For the yoghurt accompaniment:

  • 100g natural yoghurt
  • About 1/4 cucumber, grated, with the excess liquid squeezed out

To serve:

  • A generous handful of basil leaves (optional)

Method

  • Add the oil to a large, deep ovenproof dish. I tend to use one measuring approx. 30x20x5 cm but you can use whatever you have available to you.
  • Add in the potatoes and garlic and season with salt and pepper (if desired). Roast for ten minutes.
  • After ten minutes, place the turkey meatballs onto another ovenproof tray and cook in the oven.
  • After ten more minutes, add the onion and peppers to the tray with the potatoes. Also transfer in the turkey meatballs, not forgetting any juice.
  • Finally, after ten more minutes, add in the tomatoes and cook for around five minutes until they are soft. Ensure the potatoes and turkey are cooked through before serving.
  • While everything is cooking, you can prepare the yoghurt accompaniment. Place the yoghurt into a bowl and mix in the cucumber
  • Serve your turkey meatball tray bake accompanied with the yoghurt mixture, with some basil leaves sprinkled on the top.
